1. Veggie & Chickpea Curry
Makes: 4 to 6 servings
Ingredients
3 cups cauliflower florets
1 15-ounce can chickpeas, rinsed and drained
1 cup loose-pack frozen cut green beans
1 cup sliced carrots
1/2 cup chopped onion
1 14-ounce can vegetable broth
2-3 teaspoons curry powder
1 14-ounce can light coconut milk
1/4 cup shredded fresh basil leaves
Cooked brown rice (optional)
3 cups cauliflower florets
1 15-ounce can chickpeas, rinsed and drained
1 cup loose-pack frozen cut green beans
1 cup sliced carrots
1/2 cup chopped onion
1 14-ounce can vegetable broth
2-3 teaspoons curry powder
1 14-ounce can light coconut milk
1/4 cup shredded fresh basil leaves
Cooked brown rice (optional)
Directions
1. In a 3-1/2- or 4-quart slow cooker, combine cauliflower, chickpeas, green beans, carrots, and onion. Stir in broth and curry powder.
2. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours.
3. Stir in coconut milk and shredded basil leaves. Spoon rice, if using, into bowls, and ladle curry over the top.

1. Stuffed Peppers Soup in the CROCK POT
1 lb extra lean organic hamburger
1 onion chopped
11/2 c diced tomato
2 c bell peppers
11/2 c tomato sauce
3 c low sodium beef broth
1/2 tsp basil
1/2 tsp oregano
1 c cooked brown rice
Brown beef with onion. Drain and rinsed the beef. Place meat into crock pot add tomato (juice and all) the the rest of the ingredient
Cover and cook 6-8 hrs or 3-4 hrs on high
This recipe made 12 servings. Freezes great.

2. Chicken Parmesan Soup (crock pot)
4 chicken breast
1 c brown rice
1/4 tsp Italian seasoning
1/4 tsp oregano
Pinch of red pepper
1 tsp minced garlic
2 c tomato sauce low sodium
1 can diced tomato
4 c low sodium chicken broth
3/4 c Parmesan cheese
Spray slow cooker. Place chicken on bottom. Add rice with spices,onion,tomato sauce, and chicken broth stir. Cook on high for 3-4 hours. Once done remove chicken and shred. Stir in shredded chicken and cheese
