 MEALSPIRATION SPOTLIGHT: Jicama Carrot Slaw 


  • 1 cup carrots, shredded
  • 1 cup jicama, shredded
  • 2 Tablespoons chipotle mayo  
  • 3 Tablespoons chopped cilantro
  • Juice of 1/2 a lime
  • Salt and pepper to taste

Directions:
  1. Use a food processor with a shredder blade to shred the carrots and jicama. Bonus tip: buy pre-shredded carrots to save time (though they are usually more expensive).
  2. Combine the shredded carrots and jicama in a large bowl. Add the chipotle mayo, cilantro, and lime juice.
  3. Stir until combined well. Add salt and pepper to taste.
  4. Chill for best flavor.                      ________________________________________

FUN FACT SPOTLIGHT: Workout in the Pool this Summer

Swimming offers something no other aerobic exercise does: the ability to work your body without harsh impact to your skeletal system. 

When the human body is submerged in water, it automatically becomes lighter. When immersed to the waist, your body bears just 50 percent of its weight; dunk yourself to the chest and that number reduces to around 25 to 35 percent; with water all the way to the neck, you only have to bear 10 percent of your own weight. The other 90 percent is handled by the pool.
This means that the pool provides an ideal place to work stiff muscles and sore joints, especially if you're overweight or suffer from arthritis.

FINANCIAL HEALTH SPOTLIGHT:  Workout at Home or Outside

Can't afford a gym membership?  No problem!  Workout at home! 
Here are a few no-equipment-needed exercises to get you started:
  • Squats. Standing upright, feet wider than shoulders apart. With your arms extended forward or your hands on your hips for balance, squat down. Push your knees outward as you descend until your thighs are parallel with the floor. Continue pushing your knees outward as you stand.
  • Partial-body push-ups (with knees on the floor).
  • Modified jumping jacks. Instead of moving your arms over your head, do these while you press the palms of your hands together at chest level, holding your elbows out to make a straight line.
  • Chair crunches. Sit on a chair with your hands under your behind, arms straight, and fingers facing inward toward one another. Contract your pelvis and lower abs, and, keeping your knees bent at a 90-degree angle, lift your feet off the floor and tuck your knees in toward your chest while bending your upper body slightly toward your knees. Do as many as you can until you reach fatigue.
  • Chair dips. Place your hands on the side of the chair and wrap your fingers around the edge. Scoot forward until your bottom is on the edge of the chair and your arms are fully extended. Keep your feet about 3 inches apart with your legs extended, so your knees are at approximately a 150 degree angle with your heels grounded. With your elbows pointed back and tucked in tight alongside your body, do 15 to 20 dips, 3 seconds down and 1 second up. Keep your chest up and your shoulders back.

Don't forget: And your program has to include 30 to 60 minutes of moderate to vigorous cardio workouts three to five times a week.

Sunday Scoop

 MEALSPIRATION SPOTLIGHT: Paleo Spagetti & Meatballs 

What you need:

  • One medium spaghetti squash.
  • One pound of ground Italian sausage.
  • One can of tomato sauce, I used a 14 ounce can.
  • 2 tbsp of hot pepper relish (optional).
  • 4 to 6 cloves of garlic, whole.
  • 2 tbsp of olive oil.
  • Italian seasoning (Oregano, Basil, Thyme) to taste, I used about 2 tsp

How you make it:

  1. Make sure you use a large 6 quart slow cooker for this recipe. 
  2. Dump your tomato sauce, olive oil, garlic, hot pepper relish and Italian seasoning into your slow cooker and stir well.
  3. Cut your squash in half and scoop out the seeds.
  4. Place your 2 squash halves face down into your slow cooker.
  5. Roll your ground sausage into meatballs, then fit as many as you can in the sauce around the squash. I was able to work in about a half pound worth.
  6. Cook on High for 3 hours or cook on low for 5 hours.
  7. Use a large fork to pull the “spaghetti” out of your squash, then top with your meatballs and sauce.
  8. Garnish with parsley if you feel fancy, and enjoy!

Memorial Day BBQ Drinks


Within summer upon us, it's important to enjoy ourselves while also watching our calorie intake if we have that goal of getting or staying in shape!

All of these drinks have fewer than 160 calories so they aren't going to put you overboard in your calories for day!  Enjoy your time with friends and family this summer while sipping on these low-cal, but delicious drinks...   

Soda water/vodka (boring but add a squeeze of lemon, lime or oranges to the mix and give it some flavor) Note: One fluid ounce of vodka contains 64 calories (soda water is calorie free/it's different than tonic water).  

Rum & Diet CokeServing size: 6 oz..Calories: 65Ingredients: 1 oz.. rum, 5 oz.. Diet CokeAs much as I DO NOT endorse diet sodas this is a better option than most!   


Anheuser Busch, Natural LightServing size: 12 oz..Calories: 95One 12 oz.. serving of Natty Light contains just 95 calories, while the same serving of Bud Light contains 112 calories.

MEALSPIRATION SPOTLIGHT: Sooo since Memorial Day is coming and you'll have lots of BBQs to attend, I figured I'd pass along the best alcoholic drink options.  These have fewer than 150 cals.  

Soda water/vodka (boring but add a squeeze of lemon, lime or oranges to the mix and give it some flavor) 

Rum & Diet Coke
Serving size: 6 oz..Calories: 65
Ingredients: 1 oz.. rum, 5 oz.. Diet Coke
This may seem too good to be true, and to some degree, it is. Even the stingiest bartender will probably give you more than one fluid oz.. of alcohol, since just one shot is 1.5 oz... But if you feel like taking it easy and enjoying the springtime weather without going in too hard, this mix should work for you.  As much as I DO NOT endorse diet sodas this is a better option than most!   

Anheuser Busch, Natural Light
Serving size: 12 oz..
Calories: 95
One 12 oz.. serving of Natty Light contains just 95 calories, while the same serving of Bud Light contains 112 calories. The difference is pretty negligible so feel free to go for whichever beer you like more.
