What's Better than Apple Crisp on a Sunday in the Fall?!   

When the air is cool, football is on, and apples are in season, what's a better treat than apple crisp!?  I found this amazing SKINNY recipe online and tried it.  It's delicious!  Try it out and comment with how you liked it!  




                                Cinnamon Apple Crisp



Calories: 242.0 • Fat: 6.8 g • Protein: 2.3 g • Carb: 49.5 g • Fiber: 4.5 g • Sugar: 32.3 g
Sodium: 10.1

For the Filling:

  • 5 medium apples, peeled and diced
  • 1.5 oz raisins (small box)
  • 1/2 tsp cinnamon
  • 1/2 lemon, juiced
  • 3 tsp cornstarch
  • 1/4 cup agave nectar
  • 1 cup Quaker quick rolled oats
  • 1/3 cup whole wheat flour
  • 1/2 cup light brown sugar (not packed)
  • 1 tsp cinnamon
  • 1/4 cup (half stick) butter, melted

Directions: 
 1. Mix remaining ingredients. 
2. Sprinkle over fruit. 
3. Bake about 40 minutes or until topping is golden brown and fruit is tender.
4. Serve with a scoop of low fat ice cream or fat free frozen yogurt. Enjoy!!

For the Topping:

    Heat oven to 375 degrees. Combine apples, raisins, cinnamon, agave nectar and lemon juice in large bowl. Sprinkle with cornstarch. Toss until fruit is coated. Place fruit in an ungreased baking dish.

    Back to School Shakes

    Although the blasting sound of a football game on the television, cool & crisp mornings, and early alarm clocks are all major indicators that school is back in session, so is my inbox!  Let me explain :)

    We teachers are soo soo busy during the school year that it's hard enough for us to find time to pee (yes, it's true), never mind cook and eat a healthy meal.  I know firsthand for this to be true and so do my friends and colleagues.  This is the exact reason why I've gotten flooded today with e-mails about how to order Shakeology.

    Delicious Recipe for Your Football Party!

    First Sunday of the football season!   Enjoy your Sunday with healthy, low-calorie recipes like this one... 

    Hot and Spicy Buffalo Shrimp Dip



    Servings: 9 • Serving Size: 1/3 cup • Old Points: 3 pts • Points+: 3 pts
    Calories: 120 • Fat: 7 g • Carbs: 2 g • Fiber: 0 g • Protein: 13 g • Sugar: 0.9 g * Sodium: 672 mg 

    Ingredients:

    • cooking spray 
    • 4 oz reduced fat cream cheese, softened
    • 1/2 cup reduced fat sour cream
    • 1/2 cup Franks hot sauce (or whatever hot sauce you like)
    • 1 tsp white wine vinegar
    • 2 cups (12.5 oz) cooked peeled large shrimp, diced
    • 3/4 cup reduced fat Sargento Mexican blend

    Directions:

    1. Preheat oven to 375°. Lightly spray an 8 x 8 or 9 x 9 baking dish, or even a pie dish with cooking spray.Combine the first 4 ingredients together and 1/4 cup of the cheese; mix until smooth.Add the shrimp; mix well and put in a small oven safe dish.

    2. Bake in the oven until hot, about 20-25 minutes.Remove from oven and top with remaining cheese, bake until melted, about 4-5 minutes.

    3. Enjoy dip with carrots & celery. 

    Makes about 3 cups.

    Exercise the Mind Too! All About Personal Development

    Personal development --> the goal is to learn new skills and information that will help you develop into a better, more effective person. 

    On a daily basis, this could be reading personal development books, listening to personal development audiobooks, and/or watching videos of personal development gurus such as Dave Ramsey.  



    How much personal development should you do each day?  At least 10 minutes every day.  This can be easily squeezed into your car ride to work (audiotape, not reading haha) or read as you wait for the train or on your lunch break.  

    What should I read about?  Think about where you want to improve-- is it in time management, bettering your relationship with your spouse/friends, thriving at work?                
                 Choose one area to improve upon and find a great book on that topic!! 


    Here are a few of my recommendations and a little snip-it about each book 

    a.     Business
                                                   i.     Slight Edge: Discusses how to build a business

    Put yourself first --> develop yourself and you will have a more successful, happier life. 



    Monday Recipe

    Avocado Chicken Salad 

          Ingredients: 
           * 4 chicken breasts cooked and shredded
    • plain low fat greek yogurt
    • green onions sliced
    • Cilantro chopped thin
    • 1 avocado mashed
    • salt and pepper
    • lime juice

    Directions:
    1. There were no specific measurements with this recipe so just add a little until you get the consistency and taste that you want.  
    2. Started by scooping out the avocado into a bowel and mashing with a fork, then add a scoop of greek yogurt and stir until a creamy consistency.   
    3. Next, add the chopped green onions, just enough to give it some flavor.  
    4. Then, chopped up a handful of cilantro and mix that in.  
    5. Add a splash of lime juice and some salt and pepper.  
    6. Mix that together well and gave it a taste test.  You may end up adding a little more salt and pepper to make it perfect.  
    7. Cover and put in the fridge to chill. 
    8. Enjoy a couple of scoops on a whole wheat tortilla with some lettuce and tomato for a clean lunch!!!
