Take-a-Pic Tuesday

Soooo to keep myself accountable and focused on my fitness goal, I am going to post weekly accountability pictures (every Tuesday).  Keep me to that!  It's totally out of my comfort zone to post pictures to a private Facebook accountability challenge group, never mind a blog!!!  But, there is no growth or change in the comfortable zone so I'm stepping out.  This is the first accountability picture I've posted and it's just in time for the start of my 3-day cleanse tomorrow.  I want to track my progress through photos.  I always struggle with my mid-section.....so I'll be photographing that section to stay focused.  Can't wait to share my journey with you through photos!  Stay tuned!

Motivational Monday!

I'm gearing up for my New Years 3-Day Shakeology Cleanse.  Can I really do a cleanse for 3 days?  Before I get to that, let's talk about the cleanse...what is it?  The cleanse is one of the best out there for your nutrition.  It's not one of those "don't eat for 3 days" type cleanses and be tired and cranky all day.  Not at all!  Instead, it pumps your body with Shakeology (the most nutrient-dense shake on the market) so you'll have energy to still exercise and replenish your body with what it needs.  I'll have 3 shakes each day along with 2 pieces of fruit, green tea, lots of water, and a dinner of 3 cups of greens and white, lean protein.  I've done it before and my only temptation is when I'm around my students or others who are snacking.  I just want to have a snack too!  However, this time it will totally be mind over matter and I'm going to stick to it.  It's only 3 days and I have had days upon days of indulgences this holiday season (because you have to drink lots of champagne and eat lots of sweets to celebrate your Christmas engagement, right?!?).   So for 1/1 to 1/3, follow along my cleanse journey as I keep this quote in mind...

MEALSPIRATION SPOTLIGHT:
Lunch: Deviled Eggs @ 300 calories
2 large hard boiled eggs, cut in half, yolks removed and reserved.  4 tsp greek yogurt plain, 1 tsp mustard; 1 green onion finely chopped, sea salt and pepper to taste and paprika
Combine egg yolks, greek yogurt, mustard and green onion in bowl and mix til smooth.
Season with salt and pepper and fill eggs and enjoy

1 cup fresh or frozen mixed berries

Get the Scoop on Sunday

Hello Everyone!

I wanted to send you a quick note wishing you and yours a happy holiday season and healthy 2014!!  I hope you take this time to relax and enjoy time with your family and friends.

MEALSPIRATION SPOTLIGHT:
Dinner: @ 299 calories
"Chicken in foil"
1 4oz chicken breast, boneless and skinless
Sea salt and ground black pepper to taste
1 medium new potato, sliced
1/4 medium red bell pepper, chopped
1/4 medium onion, chopped
1 fresh thyme sprig

Preheat oven to 375. Season chicken with salt and pepper. Place potato slices on a piece of aluminum foil. Top with chicken, bell pepper, onion and thyme; fold foil over and seal edges securely to form a pouch.  Place on a bake sheet and bake for 15 to 18 minutes or until chicken is cooked through and no longer pink in the middle.

SHAKEOLOGY SPOTLIGHT:
"Gingerbread Man Shake"
½ tsp. cinnamon
½ tsp. ginger
1 tsp. vanilla extract
1 cup skim milk
1 scoop of chocolate or vanilla Shakeology
Blend with a handful of ice :)

Sunday Snackspiration

What's your favorite snack?  

It's so easy to just grab a bag of chips or 100 calorie pack of something super processed.  But, those types of foods will just sustain your hunger for a short period.  For a better balance of carbs and protein try these snacks @ around 100 calories each.  I'll have one of these snacks between bfast and lunch and also between lunch and dinner.  I definitely can't go more than a few hours without eating!!

1. Chicken with a Cracker @ 98 calories
1 large whole grain wheat cracker topped with 1/2 tsp prepared mustard; 1 slice of low sodium nitrate free chicken breast, and 1 slice of swiss cheese.

2. Sweet Citrus Yogurt @ 96 calories
1/2 c non fat plain yogurt with 2 tsp raw honey and 1 tsp finely grated grapefruit peel.
 

3. Turkey Goat Cheese and Avocado Roll @ 103 calories
2 slices of low sodium nitrate free lean turkey breast, spread with 1 tbsp soft goat cheese, topped with 1/2 tsp chopped raw walnuts and 2 thin slices of avocado and rolled up.
 

4. Egg It  @ 98 calories
1 large hard boiled egg, cut in half, drizzled with 1/2 tsp of extra virgin olive oil, sprinkled with 1 dash of ground black pepper.

5. Tropical Quinoa Snack @ 99 Calories 
1/3 c cooked quinoa topped with 2 tbsp coconut milk and 4 sliced medium strawberries.
